For us, the secret is that the staff learns a lot in our restaurant.
In many restaurants, kitchen staff, for example,is assigned to do just one task.
For instance, the bar.They work on the bar for six months or a year and they end up getting bored.
It's not motivating for them.In our case, for example, whoever is assigned to main courses prepares all kinds of main dishes and learns a lot.
Also, since we're a small team, people help each other and the person in charge of main courses can help with plating the starters.at any given moment.
As a result, they learn a lot.Also, for the front-of-house staff, working in a fine-dining restaurant is completely different from working in a burger restaurant.
They learn how to deal with customers in a more relaxed environment, and they enjoy that.
Another source of motivation is paying them properly, of course.
